Green Undhiyu | Gujarati Recipe | Surti Undhiya Recipe | Kathiyawadi Undhiya. Surti undhiyu Recipe
Small brinjals 4-5
Sweet potatoes 200 grams
Kand 200 grams
Surti paapdi dana 50 grams
Lilva dana 50 grams
Tuveri dana 50 grams
Haldi powder 1 tbsp
Cumin seeds 1/2 tbsp
Asaefotida powder (hing) pinchful
Salt as per taste
Oil 2-3 tbsp
INGREDIENTS FOR MAKING SPECIAL THICK GREEN PASTE FOR
Garlic 8-9 pods
Ginger as you require
Salt as per taste
Yellow salad haldi 10-15 grams
Green chilli 4-5
Coriander 1/2 cup
Take a grinding jar and put all the above mentioned items( for thick green paste) and grind them to a thick paste. Always remember that you can add 2-3 tbsp of water while grinding this only if you find that your paste is too thick to be grinded thoroughly. ( if more water is added then your paste may appear watery).
There is a special type of item that we put in undhiyu which is known as MUTHADI.
Ingredients for making muthadi:
Methi 1 cup
Salt as per taste
Coriander leaves 1/2 cup
Besan 3 tbsp
Oil to fry them.
Method for making muthadi.
Mix all the above mentioned items( for muthadi). And prepare a dough as we prepare the same for making chapatis. Make small- small balls out of this dough.
Now take oil for frying in a frying pan and fry all this muthadis in oil. Slightly deep fry these muthadis to make them bit crispy.
Method for making Surti undhiyu:
Firstly cut all the vegetables in one even shape thoroughly. You can chop them in square shape.
Now wash them properly and then take a big pan or container like vessel add at least 1-2 glasses of water to it and keep all the vegetables to boil in that vessel. Add a pinch of salt to this. Also put haldi powder 1 tbsp. Close the vessel with the help of lead and allow this vegetables to get boil for at least 15-20 minutes.
Now when you find your vegetables boiled strain the extra water out of the vegetables.
Now in a frying pan take nearly 2 tbsp of oil in a pan and on the flame of gas. As soon as your oil gets heated put the cumin seeds in it. Let the seeds crackle. Add a pinch of asaefotida powder to it. Now put the green paste that was prepared. Allow the paste to get sauteed now add all the vegetables that were boiled. Add salt as per your requirement. Now stir everything well and evenly in pan.
Also add the muthadis that were prepared to this vegetables. Stir them well. Now let the pan be on flame for 2-3 minutes. Turn the flame off.
Now empty this pan in a serving bowl and garnish the undhiyu with coriander leaves.
Your spicy Surti undhiyu is ready to be served.
